plug in 2g - sync - backup and then plug in new phone.

I haven't jailbroken - actually found o2 to be ok on this occasion.

Jailbreaking means you can install a bunch of free software

Unlocking means running on other networks

Bricking is virtually impossible, losing all your data seems pretty easy though
